Celery, Apple, and Palm Salad

Yesterday I wanted to be really productive. Instead I spent way too long organizing pictures from our recent trip to Mexico and making this yummy celery salad. It’s simple and refreshing and perfect for the remaining weeks of summer. The apple, celery, hearts of palm, and corn make a great combo and only need a bit of lime juice for dressing. Make sure to add the celery leaves to the salad and feel free to throw in any other herbs. Next time I will be adding some fresh fennel and fennel fronds and perhaps some sliced almonds.

Weight Watchers Celery, Apple, and Palm Salad
Points: 2 weight watchers points plus (1 if you don’t count the veggies)
Servings: 4 servings
Serving Size: about 1 cup
Nutritional Info: 73.1 calories, 1.4g of fat, 15.1g of carbohydrates, 3.6g of fiber, 2.4g of protein

Ingredients

  • 6 celery stalks with leafy tops, sliced thin
  • 1 apple, chopped
  • 1 cup hearts of palms, chopped
  • 1 ear of raw corn, removed from cob
  • 2 tbsp black sesame seeds
  • 3 tbsp lime juice
  • 1 tsp agave
  • Celery salt to taste
  • Pepper to taste

Instructions

  1. Mix together the lime juice and agave syrup at the bottom of a large salad bowl.
  2. Add all the ingredients and mix together, making sure the dressing is spread throughout the salad.
  3. Let sit for 5 minutes and then serve.
