I am always looking for a crunchy, salty snack and one of my new favorites are these quick, easy carrot chips. They come out crispy and delicious and are the perfect afternoon snack served with Skinny Ranch or just eaten on their own. I like mine fresh out of the oven (like a warm potato chip) but they also taste great once they have cooled entirely. These also work great with a variety of spices although I am partial to just salt and pepper.
Healthy Carrot Chips
Servings: 2
Serving Size: 1/2 of recipe
Nutritional Info: 44.9 calories, 2.4 g of fat, 5.8 g of carbohydrates, 1.7 g of fiber .6 g of protein * 1 P+
Ingredients
2 medium carrots
1 tsp olive oil
Salt and pepper to taste
Instructions
1. Preheat oven to 350 degrees.
2. Using a vegetable peeler, peel the carrot to create long flat pieces and place into a large bowl. Toss carrots with olive oil, salt, and pepper.
3. Lay out flat on a baking sheet covered with parchment paper. Bake for 6 minutes on the rack closet to the heat source and then move to a lower rack for 6-8 additional minutes until crispy but not burnt. Let cool for at least 3 minutes.
