One thing I have never really understood about Los Angeles is that there are so many amazing tacos all over the city, but not too many breakfast tacos. Austin, Texas on the other hand is a city in love with the breakfast taco. On my last visit breakfast tacos made a delicious and eager appearance almost every morning. Ever since that trip, it has been one of my favorite breakfasts. The combinations are pretty endless but mine always include some type of spicy pepper in the scramble. For this recipe I made some quick oven hard taco shells, but soft corn tortillas or low carb tortillas would work great as well.

Servings: 3
Serving Size: 2 tacos
Nutritional Information: 232 calories, 5.4g of fat, 26g of carbohydrates, 3.8g of fiber, 15g of protein
Ingredients
- 1 poblano pepper, diced
- 1/4 onion diced
- 2 oz thick cut ham, chopped
- 1 cup O Brien Potatoes or Hash Browns
- 2 eggs
- 4 egg whites
- Salt and Pepper to Taste
- 6 corn tortillas
- Optional: Salsa, Avocado, Cilantro, Cheese
Instructions
- Spray a large saute pan with cooking spray and cook the onion, poblano, and ham until the onion becomes soft and translucent.
- Add the potatoes and cook for an additional 5-10 minutes until the potatoes begin to crisp up on the edges.
- While the potatoes cook, stir the eggs and egg whites together like you are making scrambled eggs. Add salt, pepper, and perhaps a dash of hot sauce.
- Add to the potatoes and scramble until cooked to your liking. Taste and season with salt and pepper if needed.
- Place in the tacos shells and add your favorite toppings.

Um, not sure why it says this is only 5 points on weight watchers. That is way off! the ham alone is 3 points, the egg whites are 4 points, and the two whole eggs are 4 points, the hash browns are 5 points and corn tortillas are 12 points!
Hi there. I used the weight watchers recipe builder to calculate the points. With the recipe builder, the egg whites are 1 point total (3 egg whites are only 1 point and with 4, it stays as 1 point), the whole eggs are 4 points total (2 points each), cooked lean ham is 2 points total (1 point per oz), 1 cup of frozen O’brien potatoes is 2 points when prepared without fat, and 6 corn tortillas are 6 points (1 point each). That totals 15 points for the total recipe, or 5 pointsplus each. Like any recipe, the points value can change depending on the brands you use, but using the weight watchers recipe builder this is the points value I got. In addition, I do the nutritional information with a different service and if you enter the nutritional information into the points calculator you get the same value.
