Blueberry Baked Oatmeal with Meyer Lemon

Yesterday morning felt like the perfect time to break out the baked oatmeal. I woke up for the first time in months having not kicked all my covers to the floor, the air was crisp, the house smelled like coffee (I love that), and oatmeal felt the perfect thing. But not just any regular oatmeal – I wanted warm, baked oatmeal that would fill the house with the smell of cinnamon but still hold on to some bits of summer. I am not ready to let go yet. This oatmeal does just that combining the delicious, warm flavors of blueberries with a bright burst of Meyer Lemon. Meyers lemons are a touch sweeter than a regular lemon, but if you can’t find any, regular lemon juice will work, you just might need a touch more sugar. Taste the mix before popping it in the oven, and you’ll be able to tell.

Blueberry Baked Oatmeal with Meyer Lemon
Servings: 1
Serving Size: 1 ramekin
Nutritional Info: 234.6 calories, 3.1g of fat, 48.2g carbohydrates, 6g dietary fiber, 7.6g of protein * 6 P+

Ingredients

  • 1/2 cup old fashioned oatmeal
  • 1/4 cup milk
  • 1/2 cup blueberries
  • 1 tbsp brown sugar
  • 1/4 tsp nutmeg
  • 1/4 cinnamon
  • 1/2 tbsp Meyer lemon juice
  • Dash of salt

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a bowl, combine all of the ingredients. Spray a small ramekin or other oven safe dish with cooking spray. Pour in the oatmeal mixture.
  3. Bake for 20 minutes. At the end of baking, place under the broiler for 2-3 minutes to crisp up the top. Enjoy!
