I read this great article this week about meal planning that showed that, "Individuals who use shopping lists are more likely to eat two or more servings of vegetables per day" and "Individuals who employ food planning strategies eat healthier diets compared to those who purchase and prepare foods on impulse or with little to no planning." And while I don't think this is completely shocking, I know its 100% true for me, it illustrates the true power or having a meal plan and how it can have a deep impact on how healthy we eat.
Let's celebrate that by taking a week at this week's healthy meal plan. It kicks off with some of my favorite breakfast bars that are made without any refined sugar - Banana Peanut Butter Oatmeal Bars with Dates. Then lunch is a delicious Avocado Tuna Salad and dinner is a new favorite, Slow Cooker Sausage and Peppers in Tomato Sauce. Monday brings a healthy One Pot Creamy Parmesan Chicken and Broccoli Pasta and Tuesday is a Lightened Up version of Chicken Saltimbocca. Midweek meals include Mongolian Beef (yum!) and One Pan Paprika Chicken Thighs and Veggies. To end the week, Friday is quick and easy Lemon Pepper Shrimp and Broccoli dish and Saturday is Salsa Verde Turkey Tacos.

“If you fail to plan, you are planning to fail.”
Every week I like to share highlights form the Slender Kitchen meal plans. I believe meal planning is critical to any long term and effective healthy living or weight loss goals. For me it was the single thing that finally made permanent weight loss achievable. The quote stood true, when I failed to plan, I failed, and I don’t want that to happen to others.
Additionally, I believe that meal planning is a skill that takes time to master and we can all use some help! When I first started meal planning it took up countless hours pouring over recipes, calculating nutritional info and/or points, creating elaborate calendars, and building shopping lists. It was painful. Anything I can do to ease that pain for someone else is a win-win in my book.
Finally, I hope by sharing meal plan ideas, it will help you find a system that works for you. Whether it’s using our meal plans or interactive meal planner, writing one into your weekly planner, or creating your own meal planning system – I hope this feature inspires you to start planning at least a few meals every week. It will save you time, money, and it truly will help you reach your weight loss and healthy living goals.

Some highlights from this week's meal plan!
One Pot Creamy Parmesan Chicken and Broccoli Pasta: One pot pasta dishes are one of my favorite things to make lately. The starch from the pasta thicken s the sauce and everything is cooked in one pot for easy clean-up and dinner in about 20 minutes. Plus creamy, cheesy pasta is always delish.
Healthier Mongolian Beef: We love Chinese food a little too much around here and I am always looking for ways to make it at home and make it healthier. This Mongolian Beef does just that and truly delivers when it comes to flavor.
Peanut Butter Banana Oatmeal Bars with Dates: Dates are one of my favorite natural sweetners and they work perfectly in these breakfast bars that contain no added sugar.
