One of the hardest things for me when I am trying to eat fewer carbohydrates is snacks! I quickly burn out on the same snacks and am always looking to change things up. So when a reader recently reached out looking for salty, low carb snacks - I couldn't wait to get a quick list together of my favorites. However since we could all use tasty low carb snack ideas, I would love to hear about yours! What are your favorite low carb snacks?
1. Zucchini Pepperoni Pizza Bites, 56 calories, 1 SmartPoints™
This little pizzas are the perfect low carb salty snack to have in your fridge. Make up a batch on the weekend and then just quickly reheat in the microwave whenever a pizza craving strikes. You can also make them with eggplant or summer squash as the base and plan to add your favorite pizza toppings. I make these with ham, pineapple, and jalapeno all the time.
2. Beef, Turkey, and Salmon Jerky, varies
I always have some jerky stocked up in the house since it is packed with protein and is one of my favorite snacks. Just make sure to check out the ingredient labels because a lot of jerky has added sugar (think Teriyaki flavor) and if you are eating low carb, you will want to avoid that. Also be cautious about portion sizes with jerky since it usually has a ton of sodium.
3. Spinach Artichoke Dip, 98 calories, 2 SmartPoints™ (1/2 cup serving)
This is another great recipe to make on the weekend and then enjoy all week long. Usually I eat this dip with baked low carb tortilla chips or crunchy raw veggies. I also use it as a pasta sauce on spaghetti squash with some quickly cooked sausage for a delicious dinner.
4. Trader Joe’s Zesty Nacho Kale Chips, 150 calories, 5 SmartPoints™ (1/2 package)
When a chip craving strikes, these kale chips may be just the solution. They may take a bit of getting used to if you don't eat a lot of kale, but I have grown to love them! you can also make your own kale chips at home for fewer calories.
5. Paleo Thin Crackers, 70 calories, 2 SmartPoints™ (6 crackers)
I just recently discovered these crackers and they are quickly becoming a favorite to have with cheese or nut butter. They are made with almond flour, chia seeds, flax seeds, and sesame seeds and I am obsessed with the nutty flavor.
