Labor Day weekend really snuck up on me this year. It seems much too soon for kids to head back to school, cooler weather to roll in, and summer to finish up. Although a part of me (maybe more than a part) is actually pretty excited about fall. Sweaters, scarves, warm soups and stews, being able to bake without dripping sweat, and some amazing fall holidays all have me jazzed for the change in season. Not only do I have a lot of friends on the paleo diet, it's guacamole with bacon. Come on. I plan on make it a touch lighter by leaving out the olive oil and using fresh tomatoes instead of diced. Can't wait for this.

I have actually had this salad three times since seeing it last week on Vegan Cooking, a great website full of vegan recipes for vegans and anyone wanting a more plant based diet. Since beet greens are normally something I throw into the trash, I was excited to try out a recipe that used them. The blend of the golden beets, red beets, avocado, and lemon tahini dressing is delicious. Perfect for summer.
