I heart eggs. For breakfast, lunch, dinner - it doesn't matter. You will almost always find a couple dozen eggs in my fridge and usually a bowl or boiled eggs for snacks and salads. Packed with protein and incredibly versatile, they can be turned into almost anything. They are almost magical. Hmm, magical eggs, maybe that's a bit too far. Want to make them really special? I just ordered some of these adorable egg molds, fish, airplane, and flower shaped eggs, bring 'em on.
And if you allow me a moment of digression, it will come back to eggs I think. Let's see if this works out.
I have a mild, well severe, obsession with children's books. I love the pictures, the messages, and the way they can change my mood in 15 minutes. Try it. A good children's book can free you of any funk, it is magical like eggs. As a kid, I constantly read Frederick and The Hungry Thing, you could tell if you saw them today, virtually falling apart. I refuse to buy new ones because these ones were passed to me and they feel like family. Today I am still reading lots of Leo Leonni who wrote Federick, I love his art and stories, and one of my other favorites is his story An Extraordinary Egg. It's adorable. Two frogs find a shiny white egg, care for it hoping for a chicken, and then when a lizard is born they still think it's a chicken because they have never seen either. I highly recommend it for yourself or any children in your life. See we made it back to eggs. Well, kind of.
1. Quiche Cupcakes, 1 weight watchers points plus
These are almost always in my fridge. At one point a piece they are a terrific snack and make a great meal with a salad or side dish. They are easier to make then they look and can be whipped up in about 15 minutes or less. Experiment with different veggies and cheese. I am also told these freeze well and can be popped into the microwave for a quick breakfast on the go.
2. Zucchini, Feta, and Dill Egg Muffins, 1 P+
These easy to make muffins are a cross between a muffin and a quiche. They are light and fluffy and freeze surprisingly well. Make a big batch and then pull them out and microwave for a quick snack or breakfast. You can switch up the spices and cheese so you have different flavors to choose from. Try goat cheese and chives or pepper jack and jalapenos. Yum.
3. Breakfast Tacos, 5 P+
One of my favorite on the go breakfasts is egg tacos or an egg breakfast burrito. When I have some extra time, I take the time to scramble the eggs and bake the tortillas. When I am in a rush, I make the microwave eggs below and dump them into a tortilla as I am running out the door. Makes a perfect breakfast. Or lunch or dinner in my kitchen.
4. Microwave Egg Cups: 2 P+
These are definitely a favorite on lots of weight loss blogs for a reason, because they are quick, easy and delicious. I usually make mine by spraying the inside of a coffee mug with cooking spray and then pouring in either 1/4 cup of egg Beaters or 3 egg whites, some veggies (usually spinach and tomatoes), and a 2 tbsps of low fat feta or low fat shredded cheese. Pop it in the microwave for 1-1.5 minutes and viola – eggs on the go. There are literally endless variations of this easy recipe
5. Anything with a microwaved poached egg, 2 P+ per egg
Poached eggs are one of my favorite things and for me almost anything tastes better with a poached egg on top. Salads, toast, sandwiches, polenta or savory oatmeal, anything. However sometimes I don't want to go through the hassle of boiling water and now I don't have to after learning this great trick from Bon Appetit. It makes perfect poached eggs in the microwave in 1 minute. Just fill a 1-cup microwaveable bowl or cup with 1/2 cup water. Gently crack an egg into the water and make sure it is completely submerged. Cover with a saucer or lid of some kind and microwave on high for about 1 minute. You want the white to set and the egg to remain runny. You may need to experiment with your microwave at the start. Then use a slotted spoon to take out the egg. So easy and delicious.
