BBQ Ranch Chicken, Roasted Corn, and Peach Salad

Wowsa…Have I got a salad for you today! Chicken, fresh corn, peaches, a touch of bacon, cucumbers, crunchy Romaine, and cilantro all drizzled with homemade BBQ Ranch. It’s a salad that is almost impossible not to love and will please both salad lovers and haters alike. It also couldn’t be more perfect for hot summer nights when turning on the stove seems like the absolute worst thing to do. Seriously – just go and make this salad. It’s so so good.

Ingredients

  • 1 ear fresh corn (roasted or just cut off the cob)
  • 2 cups shredded (chopped) cooked chicken breast
  • 3 strips cooked crispy bacon, crumbled
  • 6 cups Romaine, chopped
  • 1-2 peaches, chopped
  • 1 cucumber, chopped
  • 1/4 cup cilantro
  • For dressing
  • 2/3 cup homemade skinny ranch
  • 1/4 cup no sugar added BBQ sauce

Instructions

  1. Prepare the skinny ranch. (Make half the recipe if you just want it for this salad or the full recipe to have extra.) This dressing is best when it is refrigerated for at least one hour before serving. Stir in the barbecue sauce.
  2. To roast the corn, place it directly onto a gas burner on medium high and turn every 1-2 minutes until charred. You could also grill it. Cut it off the cob.
  3. Toss together all the ingredients and drizzle with BBQ ranch dressing.

    What brand No Sugar Added BBQ sauce do you use? I haven’t been able to find one anywhere.

      Your timing couldn’t be anymore perfect with this by the way. I actually googled BBQ chicken salad today but didn’t find one I liked (clean, whole foods, with fruit). Then I checked my RSS feed and there it was, waiting for me! Excited to try it!

      Stubbs is a good brand for no added sugar BBQ sauce. Comes in at least three varieties.
      Walden Farms makes a “no fat no carb” sauce, but it tastes very artificial.
