Barbecue Beef Sliders

This weekend I needed to make some quick lunches but wanted something a little more interesting than a basic sandwich. Scouring my fridge and seeing hardly any options, I opened up the freezer to see if I could reinvent anything in there. Spotting some Barbecue Chiptole Beef, I decided to throw together some quick sliders. I happened to have light slider rolls in the house, but if you can’t find small light rolls you can also just cut a low calorie hot dog roll in half. Topped with some cabbage and a pickle, it makes a great quick summer meal.

Servings: 4
Serving Size: 2 sliders

Ingredients

  • 4 servings Chipotle Barbecue Beef
  • 8 light slider rolls or 8 light hot dog rolls cut in half (1 pt each)
  • 2 cups cole slaw mix
  • 8 pickle hamburger slices

Instructions

  1. Assemble sliders by layering each roll with 1 pickle slice, around 1/4 cup beef, 1/4 cup cabbage, and a little extra sauce.

    I always focus on pulled pork bbq, I really should branch out and try it with beef!

    Lately I have been using both beef and chicken thighs as an alternative :) Sometimes it’s nice to mix things up.

    Does the cabbage have dressing on it or is it just raw?

      It’s just raw but you could toss it with a couple of tablespoons of vinegar, lemon juice, or light coleslaw dressing if you wanted to soften it up a bit.
