Banana Chocolate Bread Pudding

One of my favorite holiday recipes is bread pudding and honestly I was always a little intimidated to make it, but after doing some research about making bread pudding, it is actually surprisingly simple and with a few easy changes can be pretty diet friendly. For this recipe I used chocolate chips, cinnamon, nutmeg, and bananas but it would definitely also be delicious with apples or cranberries. We liked it so much we ate it right out of the pan as you can see in the picture.

Weight Watchers Banana Chocolate Bread Pudding

Servings: 8
Serving Size: 1/8 of recipe

Ingredients

1/2 loaf day old french bread but into cubes
3 whole eggs
5 egg whites
1 cup skim milk
1/4 cup splenda sugar blend
1 tbsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg
pinch of salt
1/2 cup chocolate chips
1 banana chopped into small pieces

Instructions

1. Preheat your oven to 350 degrees.
2. Spray a round9 inch cooking dish with cooking spray.
3. Whisk together eggs, milk, cinnamon, nutmeg, salt, and splenda sugar mix until combined.
4. Add bread, chocolate chips, and bananas to egg mixture and mix together.
5. Pour everything into the baking dish and cover with foil. Bake for 45 minutes and then remove foil and bake for an additional 15-20 minutes until golden brown on the top. Let cool for 10-15 minutes. Serve and enjoy! This is also great with a little bit of low calorie whipped cream or low fat vanilla ice cream.

    I’m still confused… how much bread should go into this recipe? I’m guessing most french loafs are pretty much the same. Just want to make sure the PP value doesn’t change.

    This recipes sounds delicious. I wanted to make it this weekend!

    This recipe was a bit too eggy for me. It might be helpful to cut down on the eggs to reduce their impact on the dessert’s texture and flavor.
