This week has been a little nuts. No matter what I do I feel like I just can’t catch up with work, email, phone calls, everything. And cooking this week has pretty much disappeared. Let’s just say I have been eating a lot of frozen leftovers, veggie sandwiches, eggs, and these yummy little baked flautas, or maybe they are taquitos. I am not really sure. Either way consider this a blueprint, rather than a recipe for a quick easy meal. They taste good with almost anything stuffed inside. What do you eat when you have no time to cook?
Servings: 4 servings
Serving Size: 2 flautas
Nutritional Info: depends on tortillas and filling, around 200 calories, * 5 P+
Ingredients
- 2 cups shredded 4 point meat, like this Machaca
- 8 corn tortillas (1 point each)
- Your favorite salsa
Instructions
- Preheat the oven to 375 degrees.
- Warm the tortillas in the microwave for about 30 seconds or until they are nice and pliable.
- Scoop about 1/4 cup of meat into the tortilla and tightly roll.
- Spray both sides with cooking spray and bake for 15-17 minutes, turning once. Enjoy with your favorite salsa.
- **The points value are based Machaca but almost any filling would work. Consider making flautas with braised spinach and mushrooms, pollo pibil, picadillo, or Korean beef.

I actually did this with left over Slow Cooker Chochinita Pibil and it was really really good!
