I have to start this post by admitting that I actually didn’t cook this meal, my Mom did, but it was so simple and delicious I had to share it. It starts with any white flaky fish, for this recipe she used haddock, and then a simple stuffing topping. Then you throw it in a very hot oven and 5-7 minutes later, you have a delicious baked fish. I will definitely be stealing this recipe for all types of fish because the quick and high temperature keeps the fish moist and flaky. You can a delicious and healthy dinner ready in less than ten minutes – definitely a keeper in my book.
Healthy Baked Fish
Servings: 4
Serving Size: 6 oz of fish
Nutritional Info: 281 calories, 7.1 g of fat, 7.5 g carbohydrates, 0 g dietary fiber, 42 g of protein * 6 P+
Ingredients
24 oz of flaky white fish (for this recipe I used haddock) – 4 6 oz fillets
15 reduced fat ritz crackers
1.5 tbsp butter (room temperature)
1 tbsp fresh parsley
1 tbsp lemon juice
Salt and freshly ground pepper
Instructions
1. Turn your oven up to 500 degrees. You could use the broiler, but the fish cooks more evenly on a rack in the oven.
2. In a ziploc bag or in a food processor, crush the ritz crackers into small breadcrumb like pieces. Then mix the ritz crackers with butter, parsley, and lemon juice in a small bowl. This creates the stuffing for the baked fish.
3. Salt and pepper your fish and then press the stuffing on top. Place in the oven on a shallow baking dish for 5-7 minutes. The fish is ready when it flakes away. For a thinner fish, you may not need to cook for as long.

Looks so good! I’m always looking for new fish recipes….can’t wait to try this one!
Hope you like it! If you try a different fish I would love to hear how it turns out since I have only tried it with haddock so far. Thanks!

This was amazing! I made this last night with garlic rice and some veggies and my boyfriend actually wanted more. The last fish recipe I had made, he wasn’t a fan, but this one he made sure I knew that he’d eat it again.
